High heart rate after the maze is a frequent topic for discussion here. If you do an archives search using "high heart rate", you'll come up with hours of reading material. There are several reasons.

Early post op, anemia,
direct injury causing decreased stretch, diminished
or no atrial mechanical activity, limiting
ventricular filling,
parasympathetic nerve injury
(which may take years to recover)
and deconditioning.

Different folks seems to take differing periods of time to see their heart rates come down. Steve Giddings
