It should be no different in Australia, as only the best surgeons tackle this procedure.

As to your question re: wine, I am not sure if you mean now or the night before your maze. I would PERSONALLY say to do whatever you have been doing unless wine is always a "trigger" for afib. If it helps you to relax and doesn't represent a big afib problem, it probably can't hurt. The best person to answer this question however, would be your doctor or surgeon, since you are probably already going off any anti-arrhythmic meds and may be more sensitive to alcohol as a trigger.
